Add onions and thyme; season\u00a0with salt and pepper. Cover, and cook, without stirring, until onions\u00a0have released their liquid, about 5 minutes. Uncover, and cook,\u00a0stirring occasionally, until deep golden brown, 25 to 30 minutes more.\u00a0When bottom of skillet darkens, add a few tablespoons water and scrape\u00a0up browned bits with a wooden spoon (you may need to do this a few\u00a0times). Note: To keep onions intact, stir only occasionally.<\/p>\n<p>Meanwhile, bring a large pot of salted water to a boil. When onions\u00a0have about 10 minutes left to cook, add pasta to water in pot, and\u00a0cook until al dente. Reserve 1\/2 cup pasta water; drain pasta, and\u00a0return to pot.\u00a0Add onions and butter to pasta in pot; season with pepper, sprinkle\u00a0with grated Parm, and toss to combine. Gradually add enough pasta\u00a0water to create a thin sauce that coats pasta.<\/p>\n<p>Simple Spinach Salad with White Beans and Red Onions<br \/>\nModified from Whole Foods<\/p>\n<p>2 (15-ounce) cans cannellini beans, drained and rinsed<br \/>\n1 small red onion, quartered and thinly sliced<br \/>\n4 ounces fresh spinach leaves, chopped<br \/>\n2 1\/2 tablespoons Dijon mustard<br \/>\n2 1\/2 tablespoons apple cider vinegar<br \/>\n1 to 2 tablespoons olive oil<br \/>\n1 teaspoon Italian seasoning<\/p>\n<p>In a large bowl, whisk together mustard, vinegar and Italian\u00a0seasoning. Slowly whisk in olive oil until emulsified. Add beans and\u00a0onions, toss.
