{"id":1434,"date":"2012-05-17T20:28:48","date_gmt":"2012-05-18T00:28:48","guid":{"rendered":"http:\/\/stlydias.org\/blog\/?p=1434"},"modified":"2012-05-17T20:28:48","modified_gmt":"2012-05-18T00:28:48","slug":"sweet-potato-lentil-and-peanut-soup","status":"publish","type":"post","link":"https:\/\/stlydiasliturgy.org\/blog\/2012\/05\/sweet-potato-lentil-and-peanut-soup\/","title":{"rendered":"Sweet Potato, Lentil and Peanut Soup"},"content":{"rendered":"<div>Ingredients<\/p>\n<p>&#8211; 1 Package Lentils<\/p><\/div>\n<div>&#8211; 2 qt (approx) bottle of veggie juice<\/div>\n<div>&#8211; 1-2 qts of water<\/div>\n<div>&#8211; 4-5 large sweet potatoes in large chunks<\/div>\n<div>&#8211; 4-5 large carrots chopped<\/div>\n<div>&#8211; 1\/2 package of frozen spinach<\/div>\n<div>&#8211; 1\/2 bunch of celery chopped<\/div>\n<div>&#8211; 1 onion chopped<\/div>\n<div>&#8211; 3-4 red bell peppers diced<\/div>\n<div>&#8211; 1\/2 jar of natural crunchy peanut butter<\/div>\n<div>&#8211; Cumin, coriander, cinnamon and black pepper to taste (about 2 tsp of each)<\/p>\n<p>Preparation<\/p><\/div>\n<div>Combine lentils, liquid, carrots and sweet potatoes in a large pot and cook on med-high heat. Clarify onion and combine with mixture in pot. When the lentils, carrots, and sweet potato are starting to soften but are still a little firm, add celery and bell peppers.
