But it&#8217;s even better with peppery arugula.\u00a0You can use any short pasta, but a bulky curly type works best to contrast with the string beans. The conch-shaped conchiglie I used are perfect.<\/em>\u00a0-Phil<\/p>\n<p>Serves 4-8<\/p>\n<p>INGREDIENTS<br \/>\n1lb pasta &#8211; conchiglie or other big curved pasta<br \/>\n1\/2+ lb green beans<br \/>\n1-1\/2+ c arugula (or spinach or other appropriate green)<\/p>\n<p>1\/2 t lemon zest<br \/>\n1\/4 c lemon juice<br \/>\n1\/2+ t \u00a0pepper<br \/>\n1\/2 t salt<br \/>\n1\/2 c olive oil<\/p>\n<p>1\/4 c pine nuts<br \/>\n1\/2 c grated parmesan<br \/>\n1\/2 c shaved parmesan<\/p>\n<p>PREP<br \/>\n&#8211; Wash and trim green beans.<br \/>\n&#8211; Wash, trim and shred arugula.<br \/>\n&#8211; Cook pasta as directed, rinse in cold water until chilled, pat dry and put in fridge for 10 minutes.<br \/>\n&#8211; Cook green beans 4-8 min until fully cooked and bright green but not soft . Then chill down\u00a0in cold water, drain and pat dry.<br \/>\n&#8211; Cut cooked green beans in half or thirds &#8212; approximately 2&#8243; sections.<br \/>\n&#8211; Spread pine nuts on a cookie sheet and toast under broiler until well browned but not burned.<br \/>\n&#8211; Chop pine nuts well.<br \/>\n&#8211; Zest lemons.<br \/>\n&#8211; Juice lemons.<br \/>\n&#8211; Shave parmesan (a vegetable peeler works great).<\/p>\n<p>SERVING<br \/>\n1. Whisk lemon zest, lemon juice, salt &amp; pepper while drizzling in oil.<br \/>\n2. Put pasta in giant bowl and stir in dressing until well coated.<br \/>\n3. Mix in green beans, pine nuts and grated parmesan.<br \/>\n4.
