{"id":1648,"date":"2012-07-20T13:30:38","date_gmt":"2012-07-20T17:30:38","guid":{"rendered":"http:\/\/stlydias.org\/blog\/?p=1648"},"modified":"2012-07-20T13:30:38","modified_gmt":"2012-07-20T17:30:38","slug":"heathers-improvised-asian-salad","status":"publish","type":"post","link":"https:\/\/stlydiasliturgy.org\/blog\/2012\/07\/heathers-improvised-asian-salad\/","title":{"rendered":"Heather&#8217;s Improvised Asian Salad"},"content":{"rendered":"<p><em>When the Fresh Direct never showed last Sunday, Heather quickly improvised this delicious and nutritious asian salad with ingredients from the corner market!<br \/>\n<\/em><br \/>\nserves 4 to 6<\/p>\n<p>1 orange, juiced (alternately, 1\/4 cup fresh orange juice)<br \/>\n2 tablespoons rice wine vinegar<br \/>\n1\/4 cup safflower oil (canola or vegetable oil work too)<br \/>\n1 tablespoon soy sauce<br \/>\n1 romaine heart, thinly sliced<br \/>\n1\/4 head green cabbage, thinly sliced<br \/>\n1\/2 English cucumber, cut into thin half-moons<br \/>\n4 scallions, thinly sliced<br \/>\n1 8-ounce package baked tofu, cut into small cubes (note: I use Soy<br \/>\nBoy&#8217;s &#8220;Tofu Lin&#8221; flavor)<br \/>\n4 ounces slivered almonds<\/p>\n<p>1. In a jar, combine fresh orange juice, vinegar, oil, and soy sauce.<br \/>\nShake to combine.<\/p>\n<p>2. In a large bowl, combine romaine, cabbage, cucumber, scallions, and<br \/>\ntofu.
