Remove from the oven and set aside to cool.<\/p>\n<p><a href=\"http:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2010\/09\/IMG_7863.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-256\" title=\"IMG_7863\" src=\"http:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2010\/09\/IMG_7863-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2010\/09\/IMG_7863-225x300.jpg 225w, https:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2010\/09\/IMG_7863-768x1024.jpg 768w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/a><br \/>\nOn a separate baking sheet, place the red peppers and broil them until they are soft and blackened at the edges.\u00a0 Remove the skins.<\/p>\n<p>Once cool, place all the roasted vegetables (in batches) in a food processor with all the pan juices and pulse until smooth, check seasoning and add more sugar if needed and salt and pepper to taste.<\/p>\n<p><a href=\"http:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2010\/09\/IMG_7860.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-255\" title=\"IMG_7860\" src=\"http:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2010\/09\/IMG_7860-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2010\/09\/IMG_7860-300x225.jpg 300w, https:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2010\/09\/IMG_7860-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Heat a small amount of olive oil in a large heavy based pot. Fry the leeks over a medium heat for 2-3 minutes, add the celery and continue to cook for a further 3-4 minutes.<\/p>\n<p>Add the chickpeas and risoni and toss to combine.<\/p>\n<p>Add the stock and pur\u00e9ed vegetable mixture, increase the heat and bring to a gentle boil. Simmer for 25 minutes, add the cinnamon stick and continue to simmer for 4-5 minutes.<\/p>\n<p>Remove the cinnamon stick and serve hot with lots of tasty bread.
