Allow to heat for 15 minutes before serving over rice.<\/p>\n<p>Fresh Kale and Parmesan Salad<br \/>\nServes 4-6<\/p>\n<p><a href=\"http:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2011\/02\/IMG_9071.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-571\" title=\"IMG_9071\" src=\"http:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2011\/02\/IMG_9071-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2011\/02\/IMG_9071-300x225.jpg 300w, https:\/\/stlydiasliturgy.org\/blog\/wp-content\/uploads\/2011\/02\/IMG_9071-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>1 bunch kale, ribs removed and cut into bite-size pieces<br \/>\n1\/4 pound parmesan, shaved with a vegetable peeler<br \/>\nJuice of 2 lemons<br \/>\nEqual parts olive oil<br \/>\nSalt<br \/>\nPepper<\/p>\n<p>In a bowl, toss all ingredients together and allow to marinate for at least 30 minutes (better, an hour) before serving. Toss occasionally to break up parmesan shavings and re-coat kale pieces. (Note: the kale is NOT cooked. The lemon juice serves to soften the kale and make it palatable and delicious.
